Chicken, Shrimp, And Brown Rice Casserole

1 1/4 C brown rice, uncooked
2 Tbsp. butter, melted
4 C chicken broth (2 cans)
3 C cut up cooked chicken
2 cans(4 oz.) sliced mushrooms, drained
1/3 C light soy sauce
12 oz. pkg. shelled frozen shrimp,rinsed
8 green onions chopped (reserve 2 Tbsp.)

Pre heat solar oven.

Combine rice and butter in your dark pan. Stir to coat rice well.
Add remaining ingredients except reserved onion.
Cover. Cook till liquid is absorbed by rice. It took mine about 3.5 hours.
Sprinkle reserved green onions over top before serving.

You may also sprinkle almonds over top if desired.
