In my classroom, I stress collaboration as a foundational skill for successful navigation of the school environment.

We are social creatures who are wired to share information and experiences - - this is why social media has exploded in the past 10 years...and probably why you are reading this blog!

I have been taking requests on facebook for ideas of things that I can cook - It has been a great help to me, and I think friends enjoy watching me fumble around trying to make their requests. Everybody wins - friends see pictures as a result, I gain experience in solar cooking (and cooking in general!)

An added benefit is that as a millennial, I lack a certain amount of imagination when it comes to food. My generation famously excels at taking pictures of their food in restaurants...but when faced with the task of being creative with their own cooking...I don't see much of that.

This week's suggestion came from a teacher friend in Cincinnati, having a "Taco Tuesday" - - however, due to weather, it became a "Taco Thursday" -- and the taco meat seemed to pair better with tortillas, so I guess the meal ultimately turned into "Tortilla Thursday"

I will be revisiting this, because it was quick, simple, tasty and engaging. I really just followed the instructions on the back of the taco seasoning, but it was simple.

3/4 to 1 cup of water, 6tbsp of seasoning, 1lb of meat. Cook/Simmer for about 15 minutes until ALL the meat has browned, and remove. Done! Add cheese, Hot Sauce (if you can get your hands on some Cholula I highly recommend!) guacamole, salsa and enjoy!

This has been my favorite meal so far. As always, leave your opinions!
