Here Comes The Sun!

by Joyce Lee
(Hurricane, Ut)

Its been almost a week since the many days of storms and I eagerly wait for the sun to come up every day lately with the Beatles song in my head "Here comes the sun, here comes the sun, and its alright!"
I was able to bake some fresh ground whole wheat bread and dinner has been much easier since I can put it in and go about my business for the day.
We have some pretty amazing dinners that I feel are so good for you because you keep all the nutrients in the food by not cooking it too fast and the bonus is that the flavors are amazingly blended for the freshest taste. I use fresh herbs when I can and my Rosemary Garlic Chicken smelled so good that a couple of people who were walking by stopped to chat! ( They almost had to because the Hot Pot cooker was practically on the sidewalk by that time to catch the best sun).
Anyway it looks like I will be experimenting with melting and dipping chocolate for Christmas presents the rest of these sunny days. I'll let you all know how that turns out!

Yes, it has been nice to have the sun back out, and boy have there been some ideal sunny days with perfect temperatures.
I too have been getting some solar cooking done as well.
