Solar Cook, Freeze, and be Merry

by Joyce
(UT)

Yesterday I made my own Cream Cheese in the Hot Pot. It's easy, and much better tasting than the commercially made ones.
This morning I enjoyed my Cream Cheese on homemade multi-grain bread, sliced and toasted (which had been baked in my Sun Oven) and a dab of apricot jam which I made last weekend using my CKI parabolic.
I will continue to stuff bread, goodies, whole grains, and even a few meats that I have cooked while it was sunny into the freezer so that later next month when we have our typical monsoon pattern thunderstorms, I will still have plenty to eat in a hurry or warm up quickly between showers.
I live in the desert but near the end of summer it can be challenging for a few weeks with hard to forecast thunder showers popping up randomly.
So I guess my motto is Cook, freeze and be merry, for tomorrow it might rain! Hope all of your summers are as productive as mine!
