Yellow Summer Squash Bread

3 eggs, beaten
2 C white sugar
1 C veggie oil
2 tsp. Vanilla extract
3 C flour
3 tsp. baking powder
2 tsp. cinnamon
1 1/2 tsp. nutmeg
2 C shredded yellow summer squash
Set your oven out to preheat.
Grease 2 loaf pans.
Using electric mixer, beat eggs till fluffy. add sugar, oil, and vanilla.
Gradually mix in dry ingredients. fold in squash.
Pour half of batter in each pan.
Bake 1 1/2 hours for 2 loaves (temp. stays at about 290 degrees in my Sport oven with both loaves in) or about 1 hour for 1 loaf.
My son, who is a big fan of Mimi's in Las Vegas says this bread tastes very much like their Buttermilk Spice Muffins!
