over cooked roast in a solar oven

I cooked a roast today and for the second time I overcooked it.

I have a digital thermometer that i put on the wrong setting. folks don't set it to medium well. It's too long and your meat will still taste fine but will be a little tough.

Medium is best or use mark's rule. 1 hour per pound at 300 degrees will do it then let it rest 10 minutes.
The thermometer won't lie to you.

Don't be like me, be smarter than yours.


Thanks for the advice.

I too often overcook my roasts, even in my solar cookers.
This is one area that I still can't quite get right...roasts.

Over cooked roasts

I use a Weber BBQ remote thermometer for my roasts and chicken. You just click on the temperature you want, insert the probe into the meat and then take the monitor into the house. When it reaches the desired temperature a beeper will let you know when it is done. I make sure I use this for prime rib and tri-tip roasts as my wife is not very forgiving if I mess these up!
