reverse photosynthesis

sir ,
I have observed that when you solar bake green bitter gourd vegetable using plain glass jar on a parabolic solar cooker, skin of the vegetable slowly turns to light white color from its original green color skin.
Can you please explain why direct sun rays/sun heat falling on the green vegetables change its color ? Do we loose any food value ?

That is a great question, and I am not sure I have the perfect answer, but I think I can find out some more information in order to answer your question, but it will take me a bit of research.

* I would like to put this question out there to our other site visitors to see if maybe they might have some helpful information and then I will get back to this question with what I am able to find.

Reverse Photosynthesis?

Green vegetables contain chlorophyll, fiber, lutein, zeaxanthin, calcium, folate, vitamin C, calcium, and Beta-carotene...so the breakdown or conversion of chlorophyll, may explain the color change.

I've read that the only difference between green and white asparagus is that white asparagus hasn't been "allowed" to turn green, through a process called "etiolation". This process involves growing the asparagus so that it's covered in a thick layer of mulch and dark plastic, allowing no sunlight to reach the spears, thereby allowing no photosynthesis to occur. Are you experiencing "reverse etiolation"? Maybe.
