* Pre-heat your solar oven
2 eggs beaten
1/2 C corn Syrup
3/4 C packed brown sugar
1/2 C flaked coconut
3/4 C quick oats (not instant)
1/4 C coconut oil, melted
1 tsp vanilla extract
1/2 C sliced almonds, or chopped pecans (optional)
sprinkle of salt
1 pie crust
Bake pie crust and let it cool.
Mix remaining ingredients together. Pour into pie crust and bake 45 min- 1 hr. As soon as center is no longer jiggly and tests clean with the toothpick test, it is done.
This pie is good by itself but awesome with whipped cream or ice cream.
